INGREDIENTS

500 g carrots
2 cups sugar
4 eggs
1/2 cup powder milk
1/4 tsp. cinnamon powder
1/4 tsp. cardamom powder
1/4 tsp. saffron
1/2 cup ghee
2 tbsp. pecan nuts

INSTRUCTIONS

    Peel and grate carrots with a fine grater. Boil the carrot in a medium saucepan with little water. Cook over a medium heat until water has evaporated. In a separate bowl beat the eggs with a fork, add the sugar and milk powder and beat again. Lower the heat to medium-low and add the ghee, egg, milk and sugar and stir gently. Add the saffron, cardamom and cinnamon powder and continue stirring. Keep aside the carrots and let them cool. Divide the carrots into 16-20 pieces and make small balls from each portion, add pecan nuts and place it in refrigerator. Ready to serve when chilled.
