INGREDIENTS

12 oz. butter
12 oz. light brown sugar
1 1/2 cups light corn syrup
10 oz. cake flour
12 oz. finely chopped almonds

INSTRUCTIONS

    In large heavy saucepan, heat butter , brown sugar, and corn syrup until butter is melted and sugar is dissolved.

    Remove from heat

    Stir in flour and nuts
  4. 4
    Deposit 1 oz. mounds of batter onto silicon baking sheets or parchment lined sheet pans sprayed well with pan release
  5. 5
    Deposit 8 portions per sheet pan, leaving ample room to spread while baking.

    Bake in convection oven at 300ºF until golden brown and bubbling across surface, about 8-12 minutes.

    Remove from oven, allow to cool for no more than 30 seconds.

    While still hot remove the tuilles and place over molds to form desired shapes.

    Allow to cool thoroughly before filling.

Best used the same day of preparation. Hold Tightly wrapped at room temperature for up to two days.
