INGREDIENTS

7 oz. bread flour
14 oz. confectioner's sugar
21 oz. almond paste
3 oz. milk
17 oz. egg whites

INSTRUCTIONS

    In 20 qt. bowl with paddle attachment, or in large food processor, combine flour, sugar, and almond paste. Mix until almond paste is finely broken down.

    Add milk and continue mixing to form a paste, so as to knead out the lumps of almond paste.

    Slowly add remaining egg whites in several stages, stopping to scrape with a rubber spatula to incorporate any lumps.

    continue mixing or processing until mixture is completely smooth.

    Spread thinly over desired stencil shapes on silicon mats or parchment lined sheets sprayed with pan release.

    bake at 300ºF in convection oven until just set, but not yet colored. Remove from oven to cool.

    Return to oven oven to continue baking until uniformly golden.

    Work quickly to form shapes as desired. Return to oven to warm if they become to brittle to shape.

    Refrigerate remaining batter until next use.
