INGREDIENTS

4 lb. sugar
1 1/2 lb. butter
1 lb. shortening
2 lb. cake crumbs, fine
16 eggs
4 lb. bread flour
2 tsp. baking soda
3 tbsp. cinnamon
1 1/2 tsp. nutmeg
3 lb. filbert flour
1/2 cup milk

INSTRUCTIONS

    Cream fats and sugar in 20 qt bowl with paddle attachment.
  2. 2
    Add crumbs, eggs and milk. Mix on 2nd speed till blended.
  3. 3
    Sift together dry ingredients and add to bowl.
  4. 4
    mix, staring on 1st speed, then on 2nd, until dry ingredients are incorporated.
  5. 5
    Chill dough thoroughly before using.
