INGREDIENTS

6 lb. semi-sweet chocolate couverture 54%
2 lb. 4 oz. butter, unsalted
2 qt. heavy cream

INSTRUCTIONS

    In heavy saucepan or steam kettle, bring cream to just just below boiling.

    Turn off heat

    Add chopped chocolate and diced butter. Leave undisturbed for 5 minutes.

    Using a large, wide tined wire whip, stir to emulsify the mixture until it is smooth and shiny.

This ganache is for glazing loaves of frozen chocolate pate.
