INGREDIENTS

4 lb. semi-sweet chocolate couverture, 54%
8 oz. butter, unsalted
6 cups heavy cream

INSTRUCTIONS

    In large heavy saucepan or in 20 qt. steam kettle, bring cream to just below boiling.

    Turn off heat.

    Add finely chopped chocolate and diced butter, and leave undisturbed for 5 minutes.

    Using a large, heavy tined wire whip, gently stir to fully emulsify ingredients into a smooth, shiny mixture.

    For Temptation Cake decor, pour ganache into shallow pans to cool until ganache just starts to mound when stirred but is still fluid. Deposit evenly across prepared cakes. Smooth evenly with metal spatula to cover.

    When ganache has set enough to hold a mark, use fine side of metal decorating comb to embellish cake top and sides with wavy patterns.
