INGREDIENTS

4 lb. sugar
8 oz. butter
1 tbsp. nutmeg
1/4 cup cinnamon
30 lb. apples, peeled and sliced
1/2 cup lemon juice

INSTRUCTIONS

    In a 40 qt. steam kettle, melt butter. Add in remaining ingredients and stir over medium high heat until sugar is dissolved and apples are desired degree of tenderness.

    Deposit apples into shallow pans to cool properly, then deposit into desired storage containers for future use. This is a sub-recipe preparation.
