INGREDIENTS

2 lb. 3 oz. vegetable shortening
1 lb. 12 oz. light brown sugar
2 lb. 3 oz. granulated sugar
20 eggs, large
5 oz. vanilla extract
1 lb. 14 1/2 oz. Coconut
1/2 cup milk
1 lb. 14 1/2 oz. oats
1 1/2 oz. salt
3 lb. 8 oz. bread flour
2 lb. 10 oz. raisins
1 oz. baking powder
1 oz. baking soda

INSTRUCTIONS

    In a 20 qt. mixer bowl with paddle attachment, cream shortening and sugars on 2nd speed until light and fluffy.

    Add lightly beaten eggs, vanilla, coconut and milk. Mix on first speed to incorporate, then on 2nd speed until smooth.

    Measure and sift together remaining dry ingredients. Add to mixer bowl with raisins. Mix on 1st speed until just thoroughly combined. Scrape from bottom of bowl by hand and incorporate by hand to prevent over mixing.

    Using #24 portion scoop, deposit dough on parchment lined sheet pans. Dough should be laid in rows 8x5. Moisten hands and flatten each cookie slightly with the palm of hand before baking.

    Bake at 350ºF in conventional oven until lightly browned and just set. (300ºF in Convection ovens) approximately 18 minutes. Allow to cool on sheet pans before disturbing.
