Rainbow Tower Salad

INGREDIENTS

2 tbsp. apricot glaze or preserves
2 tsp. hot mustard
2 tsp. sugar
1 tsp. honey
1 tsp. rice vinegar
2 tsp. lemon juice
1/2 cup finely chopped tomato
1/2 cup finely chopped mango
1/2 cup finely chopped avocado from Mexico

INSTRUCTIONS

    In a bowl, whisk together apricot glaze, mustard, sugar, honey, vinegar, and lemonjuice. In a second bowl combine 1 tbsp. each tomato, mango, and avocado.

    Place 2 1/2-inch flan rings or open cookie cutters on 2 chilled salad plates. Press half of remaining tomato in each ring; top with a layer of mango and then avocado. Press to make level and remove rings.

    Drizzle apricot mixture on each plate and serve. Sprinkle reserved tomato, mango, and avocado around towers. Garnish top of tower with cilantro, if desired.
