INGREDIENTS

3/4 cups sugar
3 tbsp. cornstarch
5 1/4 qt. blueberries, fresh or frozen

INSTRUCTIONS

    In 10 qt. saucepan, stir sugar and cornstarch together until blended. Add blueberries; toss until uniformly coated with sugar/cornstarch mixture. Cover and cook over medium heat, stirring occasionally, until blueberries thaw and mixture begins to boil, about 15 minutes. Remove lid and cook, stirring constantly, until boiling and thickened, about 5 minutes. Stir in additional sugar, if needed.

Blueberries vary in sweetness; add additional 1/4 cup sugar, if needed.

Optional flavorings: add ground cinnamon or grated lemon rind/lemon juice to sugar/cornstarch mixture. Saucy Blueberries is also an excellent topping for pancakes, waffles, French toast and ice cream.
