Blueberry Granola Bars

INGREDIENTS

2 1/2 cups old fashioned rolled oats
1/2 cup chopped walnuts, optional
6 tbsp. vegetable oil
3/4 cup packed light brown sugar
1 egg
1 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/4 tsp. salt
3/4 cup whole wheat flour
1 1/2 cups frozen blueberries, not thawed

INSTRUCTIONS

    Preheat oven to 350ºF. Combine oats, walnuts and 2 tbsp. vegetable oil in a medium bowl; spread out on an ungreased rimmed baking sheet and bake 12 to 15 minutes, stirring occasionally, until golden. Set aside 5 minutes to cool slightly. Line 9" x 13" baking pan with aluminum foil; coat with non-stick cooking spray.

    In same medium bowl, beat together brown sugar, remaining 4 tbsp. oil, egg, vanilla, cinnamon and salt. Beat in the flour until smooth. Stir in the oatmeal mixture until blended; immediately stir in the firmly frozen blueberries. Pat the dough into the prepared pan, firmly pressing to make a flat layer. Bake until firm and lightly browned, about 30 minutes. Cool completely in the pan on a wire rack. Cut into 16 to 24 bars.
