Almond, Apple, Blue Cheese Salad

INGREDIENTS

1/2 cup lemon juice
2 oz. green onion, thinly sliced
1/4 tsp. salt
1/4 tsp. black pepper
Almond or other vegetable oil, as needed
48 pieces french bread, thinly sliced
18 qt. salad greens, mixed
2 lb. apple, cored and sliced thinly
1 lb. 8 oz. Roquefort or other blue cheese, crumbled
1 lb. 8 oz. natural almonds, sliced and toasted

INSTRUCTIONS

    To make dressing, mix lemon, onions, salt, and pepper; beat in 1 cup oil. Reserve.

    Lightly brush bread with oil. Toast on each side. Cool and reserve.

    Toss 3 cups salad greens with 1 tbsp. of dressing. Arrange on a serving plate. Arrange 1 oz. of sliced apple on top. Sprinkle with 1 oz. cheese and 1 oz. almonds. Garnish with 2 pieces toasted French bread.

notes

To toast, spread almonds in a single layer or a sheet pan. Bake at 350°F, stirring often, until almonds just begin to color, 10 to 15 minutes.
