Southeast Asia Crab and Almond Salad

INGREDIENTS

8 oz. lump crab meat, cleaned
3 oz. almonds, ground or toasted
2 1/2 tbsp. lime juice, fresh
3/4 oz. Nahm Pla, fermented fish sauce
1/4 oz. Galangal, available at Asian markets
1 oz. shallots, thin sliced
1/4 oz. scallions, thin sliced
1/4 oz. cilantro, minced
1/4 oz. mint, minced
3 oz. cucumber, small dice
3 oz. long bean, available at Asian market
1/4 oz. dried Chilies, crushed
1/4 oz. basil, Thai
2 heads boston bibb lettuce

INSTRUCTIONS

    In a clean stainless bowl, combine ingredients well.

    Allow to set and marinade for approximately an hour before service
  3. 3
    Serve with bibb lettuce leaves as wraps
