INGREDIENTS

1 lb. blanched peeled and seeded Florida tomatoes
4 tbsp. extra virgin olive oil, divided
1/4 cup chopped shallots
1/2 tsp. salt
1/4 tsp. pepper

INSTRUCTIONS

    Coarsely chop tomatoes. In a large skillet, over medium-high heat, heat 3 tbsp. oil. Add tomatoes and shallots, salt and pepper. Cook until thickened. In a blender, puree the tomato mixture, drizzling 1 more tbsp. oil through feed tube.
